Applegate Valley grower/winemaker Rachael Martin studied in Nevada and worked in the world of criminal justice before returning home to devote herself to wines styled after those from the Iberian Peninsula. This fortified dessert is among the handful of expressions with Tempranillo she creates, a blend of Port-style grapes Tinta Cão (60%), Touriga Naçional (31%) and Tinta Roriz (aka Tempranillo). This project often requires her to work well into the night to time her addition of brandy, which kills fermenting yeast and makes for residual sugar of 9%. Its theme is one of dark cherry, dried plum, huckleberry, golden raisin and baking spice. The book closes with plush notes of milk chocolate and almond.
