Davis-trained winemaker John Quinones has collaborated with the Moore family on some of its projects involving red Bordeaux varieties, including this Cab from Crater View Vineyard near its tasting room in Jacksonville, Ore. Dusty black currant and Marionberry aromas include chocolate, black olive, cherry pipe tobacco and baking spices. Those same fruit notes carry onto the palate with a structure of fine-grained tannins that blossom. Juicy blueberries and mint make for a farewell that lends this wine to well-marbled meat, herb-encrusted roasts and savory cheeses such as Gouda, aged cheddar or Rogue Creamery’s Oregonzola.
