Seattle wood craftsmen Tom Stangeland has transformed much of his studio into a winery/tasting room between SoDo and Georgetown. For these two barrels of Petit Verdot, he concentrated his effort on Joe Hattrup’s Elephant Mountain Vineyard – among the highest-elevation sites in the Yakima Valley. The woodworker reached for new American oak in this barrel program, which creates the mood of mocha with plums, Marionberry and fig, backed by hints of beef jerky. Frontal tannins open up the palate, which is redolent with blackberry, black currant and blueberry skins. Barrel spice of cocoa powder and black pepper makes for a pleasing finish as the tannins are beveled. Suggested pairings include rack of lamb and Beef Wellington.
