This certified sustainably farmed and Salmon-Safe vineyard planted in 2006 along Bethel Heights Road north of Salem, Ore., by Minnesotans provides McMinnville winemaker Byron Dooley with ingredients for a clonal blend of Pommard (67%) and 777. Dusty plum, ripe red currant and cherry candy aromas turn into more purple fruit flavors of cherry, plum and pomegranate. Food-friendly complexity of red bell pepper and cherry skin tannins pick up a pinch of baking spice for a juicy finish that bodes well for Duck Confit.
