South Sound winemaker Terril Keary continues to recruit adventurous winesters to Tenino, Wash., and his delicious dessert offerings continue to impress. Chocolate is the focus of this fortified wine, and the enticing nose is akin to Devil’s Food Cake with raspberry sauce. Its flavor profile takes you on quite a ride with a dark and juicy approach of cocoa and a Grape Tootsie Pop. The residual sugar check in at just 4% as the sweetness picks up only as the back end while the balanced use of alcohol makes for a butter cream finish. This earned a silver medal at the 2016 Capital Food and Wine Festival Wine Competition, and suggested pairings include chocolate-dipped strawberries and Chocolate Ribbon Cheesecake.
