Daven Lore Winery 2012 Newhouse Vineyard Reserve Cabernet Sauvignon, Snipes Mountain, $40
Gordon Taylor waited until this vintage and this two-barrel lot from the Newhouse site in the heart of the Yakima Valley to release his inaugural 100 percent unadulterated Cabernet Sauvignon, harvested Oct. 25. The choice of 28 months in new American oak allows for a nose of Bing cherry and cassis with chimichurri spices, black olive and crushed leaf. Its flavor profile goes a bit darker with rewarding blackberry and dark plum notes and enjoyable sandy tannins. Finishing touches of molasses and brown sugar add a bit of hedonism and length to the finish. Suggested pairings include Beef Wellington, rack of lamb, gnocchi in a sage butter sauce and Nicoise salad.
