Fermentation and aging in neutral French oak imparts aromas and flavors of poached pear, fresh fig, dried pineapple and lemon curd with a hint of vanilla. It offers a clean and rich entry with mouthfilling fruit, touches of baking spices, juicy acidity and a farewell of apple pie filling. Suggested food pairings include an entree of halibut, cod, chicken or pork that’s accompanied by roasted bell peppers, olives and fennel.
