The 2012 vintage from Woodinville dentist Kit Singh earned a spot in the Washington State Wine Commission tent at last year’s U.S. Open, and his latest work from Dineen Vineyard in the Yakima Valley is tracking nicely, too. Fermentation and aging in neutral French oak imparts aromas and flavors of poached pear, fresh fig, dried pineapple and lemon curd with a hint of vanilla. It offers a clean and rich entry with mouthfilling fruit, touches of baking spices, juicy acidity and a farewell of apple pie filling. Suggested food pairings include an entree of halibut, cod, chicken or pork that’s accompanied by roasted bell peppers, olives and fennel.
