Cathedral Ridge Winery 2012 Rock Star Reserve Red Wine, Columbia Valley, $48
Cathedral Ridge, one of the Columbia Gorge’s historic properties, continues its tradition of creating this proprietary blend with a straight 50/50 mix of Cabernet Sauvignon and Syrah. The nose developed for the Hood River, Ore., winery by Michael Sebastiani is sassy and floral with clove, lilac and charcuterie notes with black cherry and leather. There are sweet blueberry and Marionberry flavors at the start, which lead to more charcuterie and spicy notes. Its structure is defined by ample acidity and firm, yet rewarding tannins. Enjoy it with Portabello Sandwiches with Gorgonzola Butter and Red Peppers.
