Rising star Meredith Smith recently was promoted to become head winemaker at Sawtooth’s big sister – Ste. Chapelle. The hope is that she will continue to produce wines of sophistication such as this Provence-style rosé for Sawtooth despite the additional responsibilities that come with taking over Idaho’s flagship property. Her latest example of rosé carries a delicate pinkish hue, and the endearing nose comes with hints of white strawberry, red cherry, bubble gum and cotton candy. The drink, however, is dialed to delightful dryness, bringing flavors of pink raspberry and strawberry. There’s a beautiful silkiness to the midpalate that’s brushed aside by dynamite acidity and a finish of Montmorency cherry. The food possibilities are virtually endless, but one suggestion would be Pan-Seared Cod. Sadly, the mid-November cold snap of 2014 trimmed production by more than half for the 2015 vintage.
