Sokol Blosser’s popular Evolution No. 9 White program continues to percolate with what the Dundee Hills winery has dubbed “the evolution of celebration” – a methode Champenoise sparkling wine program using that nine-grape base for these bubbles (Semillon, Müller-Thurgau, Riesling, Pinot Gris, Gewürztraminer, Muscat Canelli, Early Muscat and Chardonnay). Nose-tickling hints of sourdough bread, fresh-cut apple and clove include dried pineapple and Big Hunk candy bar. And yet, it is presented crisply with fresh, tart and tasty flavors of Granny Smith apple, dried apricot and lingering lemon juice. Sparkling wine is arguably the most versatile of all craft beverages. Here, they offering up ideas ranging from brunch, lunch, dinner and movie night with Eggs Benedict, grilled cheese sandwich, potato chips, Buffalo wings, Chicken Saltimbocca and truffle-salted popcorn.
