The Walla Walla airport complex is home to a variety of quality producers, including Doug Simmons’ quaint Eleganté Cellars. He remains committed to Les Collines Vineyard in the Blue Mountain foothills south of town for his Syrah, a low-alcohol, food-friendly drink with distinctive, savory and brambly tones of blueberry, red currants, earthiness and truffles. Bright acidity and nicely managed tannins combine for delicious length to pair with hearty stews, smoked meat and game such as elk, buffalo and fowl. It earned a silver medal at the 2016 Walla Walla Valley Wine Competition, a scholarship fundraiser for the Walla Walla Community College wine program from which this now-retired high school chemistry teacher earned viticulture and enology degrees.
