This Gewürztraminer by bi-state vintner Nicolas Quillé is shrinking violet here, a product of two vineyards on opposite of the Yakima River. It’s more like a bouquet of rose petals in the aroma and a bowl of unadulterated lychee nuts on the palate, finishing with the varietal’s perky spice and stimulating acidity to easily balance the residual sugar of 1.5%. Quillé – a Master of Wine candidate – and head winemaker Steven Sealock have gradually dialed down the sweetness in recent years during their work at their West Richland, Wash., winery. This earned a gold medal at the Great Northwest Invitational Wine Competition, and it should pair nicely with dark meat off that holiday bird.
