The continued approach of half a year spent on the lees in old German wood barrels creates aromas of lime, Granny Smith apple, white pepper and oyster shells. Penetrating acidity mixes with flavors of green apple and starfruit, backed by a finish of lemon peel. Suggested pairings include slow-cooked lentils, shellfish and a fresh loaf of hearty bread.
