Jim Bernau has hired several consulting winemakers for his growing list of special projects, and he wisely retained the services of Andrew Davis and Radiant Sparkling Wine Co., for this young sparkling wine program. This debut effort with brut from estate Pinot Noir and Chardonnay is remarkable. Its complexity is apparent starting with the nose of banana taffy, nougat and caramel apple. Rather than age, the 18 months of surlie aging shows with delicate bubbles, approachable creaminess and flavors of Mandarin orange with pear. There are no rough edges, finishing with sweet citrus notes. Enjoy with almost anything, but suggested fare includes oysters, sashimi and grilled scallops or fried calamari, Caesar salad and soft cheeses.
