Gordon Taylor’s home/winery/tasting room is perched overlooking the town of Prosser, Wash., and the Yakima River, but he’s also just beyond the northern edge of the Horse Heaven Hills. Alder Ridge, his source for this Cab, is across a southern ledge of the Horse Heaven Hills. Another vineyard of renown, young Double Canyon, supplied the Petit Verdot (13%) and Malbec (10%). Many of the wines, red and white, from this American Viticultural Area carry a sense of dusty minerality, and this bottling by Taylor is no exception. His use of oak from Minnesota develops fun and tasty notes of a Mounds Bar with its chocolate and coconut, along with black cherries, anise and resin. Its thread of acidity bodes nicely for suggested pairings of Mushroom Risotto, Asparagus Beef Roll-ups, Beef Wellington, Swedish meatballs and borscht.
