David Volmut has a deep thirst for Italian varieties, and his winemaking career took root in Washington’s Yakima Valley. He pulled his Dolcetto from Lonesome Spring Ranch east of Prosser and goes with whole-berry fermentation and sans oak. That makes it fruity from start to finish, a fresh and fascinating nose of cherry cola with a hint of Concord grape juice and herbs. Blackberry and pomegranate flavors are carried by gravelly tannins and Montmorency cherry.
