Bayernmoor Cellars 2016 Destiny Ridge Vineyard Cabernet Sauvignon, Horse Heaven Hills, $39

Prominent patent attorney Larry Harris and his family established their 6-acre vineyard of clone 777 Pinot Noir just south of Lake McMurray in western Washington. Meanwhile, they’ve surrounded themselves with talent, led by their work with winemaker Brian Carter and grower Jarrod Boyle, owner of Alexandria Nicole Cellars. This Cab from Bayernmoor reflects the work of both Carter and Boyle’s Destiny Ridge Vineyard in the Horse Heaven Hills, an experience that brings complexity and opulence with a sense of power. Aromas of sweet herbs and Bing cherry cobbler lead to a stream of dark purple fruit reminiscent of blackcurrant, blackberry and black cherry. Soft, nicely integrated tannins still leave room for more herbs and smoke, backed by a mouth-filling finish of cherry vanilla – a touch of the 22 months in 65% new French oak. Suggested pairings include this Bobby Flay recipe for prime rib or Lamb Tagine, cheeses such as cheddar or pecorino and braised red cabbage.
