Dave Specter works with 11-year-old vines at Plum Hill Vineyard in Gaston, Ore. for this single ton of Pinot Blanc, which the professional French horn player named in honor of George Gershwin’s Rhapsody in Blue. Citrusy aromas reminiscent of gooseberry and lime zest are joined by Asian pear. A tip of the glass brings into view “wine diamonds” at the bottom, which usher in tangy flavors of fresh-squeezed lemonade and Granny Smith apple. The finish of wet stone and a twist of lime combine to lend itself to linguini in clam sauce, mussels or Fettuccine Alfredo.
