Jeremy Santo, who grew up in Prosser, Wash., just below the northern ledge of the Horse Heaven Hills, produced some stellar pink wines for the Milbrandt brothers during his time at Wahluke Wine Co. He’s doing the same in his hometown for the Mercer brothers, using one of Washington’s top sites – Spice Cabinet Vineyard, at the southern edge of the Horse Heaven Hills near Crow Butte Park. This rosé with Grenache offers a classic light salmon color akin to Provence, and there’s lovely perfuminess with dried strawberry, peach and orange zest. Light and clean help describe the flavors of strawberry-rhubarb and Rainier cherry skin. The brisk finish makes it versatile and ideal for tapas. Suggested pairings include a cranberry walnut spinach salad, smoked ham with scalloped potatoes or crab quiche.
