This bottling labeled as Cabernet Sauvignon leans Left Bank with its backing of Merlot (10%), Cabernet Franc (7%), Malbec (4%) and Petit Verdot (1%) off six estate vineyards – led by Pepper Bridge and followed with Summit View, Octave, Goff, Seven Hills and Les Collines. Aromas of cherry, plum, sweet herbs and light toast lead to an approachable and tied together profile of blueberry, blackberry and pie cherry with blackcurrant skins. Soft tannins and juicy acidity make for a food-friendly medium finish. Recommended pairings include blue cheese crostini, beef stew, grilled portabellos and even chocolate chip cookies.
