Ashton Troy Wines 2016 Cuvée du Soleil White Wine, Columbia Valley, $25

When winemaking dentist Kit Singh and wife Riinu launched their Woodinville winery, they named it Lauren Ashton Cellars for their two children, Ashley Lauren and Ashton Troy. Well, it’s easy to get a sense of who wanted his own brand, and the restaurant trade is his target market. This is a tasty Washington example of a white Bordeaux, a blend of Sèmillon (55%) and Sauvignon Blanc (45%) from 40-year-old Cave B Vineyards in the Ancient Lakes of Columbia Valley and Mercer plantings in the Horse Heaven Hills. While just a third of the blend was fermented in stainless steel, the barrel program of one-third new French oak and one third neutral created mouth feel without adding any toast. Charming aromas of passionfruit, Ambrosia salad and apple blossom lead to flavors of Key lime and Meyer lemon, backed by white peach and a food-friendly finish of breadfruit. Enjoy with shellfish, cheese plates or antipasto. And these wines are available online, at select restaurants and in-suite at Alderbrook Resort.
