Precept created its “Dark Shadow” Cab beginning with the 2015 vintage, and the fruit traditionally has come within a 20-minute at the lower end of the Yakima Valley with Willow Crest, Skyfall and Goose Ridge vineyards. This is a tidy little Cab with ripe tones of black cherry, blackberry and milk chocolate. The tannin structure is ample, and the sprinkling of powdered sugar in the finish makes this a quaffer. Enjoy with pot roast, herb-influenced pork loin, lamb, venison or poultry.
