New Zealand native Haydn Mouat, who worked alongside Seven Hills Winery founding winemaker Casey McClellan for a decade, returned to the Walla Walla Valley not long after these barrels were filled with fruit, so he stitched together this blend of Merlot (40%), Cabernet Sauvignon (30%) and Syrah from Precept’s three plantings in the Horse Heaven Hills – Alder Ridge, Canoe Ridge and Wallua. The nose featured blue fruit, vanilla, clove and beet juice, leading to a big yet tamed structure of Bing cherry, blueberry and elderberry that finishes with a lick of chocolate, making this quite a quaffer.
