rex hill seven soils chardonnay 2017 bottle - Rex Hill Vineyards 2017 Seven Soils Chardonnay, Willamette Valley, $35

This example of the Seven Soils program by this Certified B Corporation is blend of five vineyards, predominantly historic Jacob-Hart in the Chehalem Mountains, Sims in the Dundee Hills and Carabella on Parrett Mountain, that spends 11 months in French oak. The level of new wood (18%) rewards those who enjoy a reserve style that still offers an abundance of fruit with merely underlying nuances of toast and butter. Golden Delicious apple, starfruit and lots of lemony notes are joined by hints of jasmine and lavender. There’s complexity to the delicious mouthfeel finished with lemon oil. Enjoy with this recipe for Lemon Chicken Breasts.
