The Mortimers launched their collaboration with French enologist Pierre Millemann in 2016, and the winemaker for that bottling was Biodynamic researcher Steve Ryan. In 2017, the projected shifted to the Mortimers’ other winemaker – Jim Sanders – this is produced with 50% whole-cluster fermentation of early-picked fruit from their Parrett Mountain planting. Aromas of blueberry and dusty herbs emerge from behind barrel notes of toast and clove, which lead to enjoyable dark blue fruit flavors of huckleberry, pomegranate and more blueberry, backed by a pleasantly spicy finish of cinnamon and white pepper.
