The recent closure of Cadaretta in Walla Walla has allowed him to focus attention on the launch of own brand and its nine offerings. His schooling in New Zealand makes Sauvignon Blanc a natural choice, particularly with his previous work with Evergreen Vineyard under the acclaimed Feral program at EFESTĒ. He relies on native fermentation to help consumers conjure up thoughts of Italian lime soda, Granny Smith apple, butterscotch and fresh-cut celery. There’s a sense of slate and salinity brought along by the mouthwatering acidity and frothy finish. With an octopus on the label, perhaps this will grab the attention of Seattle hockey fans, and it’s an ideal pairing for just about anything from the sea.
