Rising star Kyle Welch worked with this sister site of renowned Elephant Mountain Vineyard to produce a scintillating wine resulting from his first bottling of Sauvignon Blanc. He used one ferment to showcase fruity notes, another to preserve the grape’s natural grassiness and then blended them. Mission accomplished. Its classic and complex Sauv Blanc nose offers lime, apricot and nectarine amid grassiness and wet slate. Inside, there’s lime juice at the start and those stone fruits follow right along, picking up a slice of celery. Meyer lemon on the finish leaves it mouthwatering and balanced without going overboard. Last summer, the Richland, Wash., winemaker used it to earn a double gold medal and win best of show at the Bellingham Northwest Wine Festival. This winter, one of our panelists noted, “I wouldn’t mind drinking a lot of this.”
