This Kitsap Peninsula producer’s fermentation protocols on this project are inspired by historic winemaking in Valpolicella, and the Cab that Dr. Brian Petersen pulls out of Double Canyon Vineyard in the Horse Heaven Hills is worth his extra effort. The barrel program that’s 63% new French oak helps create a classic nose of black cherry and Marionberry with mocha and pencil shavings. That fruit makes its way onto the palate that brings along substantial yet fine-grained tannins, a sense of slatiness one expects from the Horse Heaven Hills, and a pleasing finish of black currant.
