Chef-turned-winemaker Sean Davis and his brothers-in-law, Ryan and Matt Marshall blend from three vineyards including their 15-acre estate, so melange of available Pinot Noir clones for this cuvée includes Dijon 114, 777, Mariafeld and the sexy Pommard. They created a cherry bomb from stem to stern, beginning with the nose of cherry punch, cola and blackberry with a pinch of clove and a sensual mist of the sandalwood hint in Lancôme’s Magie Noire. Beyond the coating of black cherry on the palate, there’s blackcurrant, bittersweet chocolate tannins and earthiness to provide depth. The trail of boysenberry includes a dusting of pink peppercorns and a lasting lick of cherry juice. Enjoy at the Horse Radish Restaurant — steered by Davis’s wife, Julie — in downtown Carlton with a plate of gnocchi, pork cheek and blue cheese.
