Frank Roth grew up immersed in the Pacific Northwest wine industry and along the way trained under one of the region’s top sparkling wine producers — British Columbia’s Mark Wendenburg. Roth produces two methode Champenoise bottlings, and this approach made with estate fruit from the historic Tagarres family’s broad holdings is a classic example with a theme of freshly baked yellow cake, dusty Asian pear and Granny Smith apple. A nibble of toast comes with the rewarding mousse, capped by a deliciously crisp finish of lingering lime and a twist of lemon. That clean and bright structure makes this a delicious pairing with anything on the Tagaris Taverna menu at the end of Tulip Lane in Richland.
