Jim Dahlman used a pétillant-naturel from the 2019 vintage to help launch his brand, and his follow-up to those bubbles — a blend of Grenache and Tempranillo from Iberian-focused Sonrisa Vineyard in the Yakima Valley – shows this Lynnwood, Wash., winemaker is a quick study. It’s a nicely executed expression of a methode ancestral, a style of wine that can be cantankerous for both the producer and the consumer. However, this example is easy to get into and enjoy. The Provence color and the bubbles cast out notes of dusty pear, peach blossom and lemon. On the delivery to the palate, it’s nicely frothy and brisk with flavors of pink strawberry, golden raspberry and quince, making for a mouthwatering finish of lemon peel that’s a deliciously versatile platform for food pairings.
