The waiting game in the Pacific Northwest for Cabernet Sauvignon got stretched out in 2011, and Joy Andersen began pulling the fruit off Cold Creek and the nearby Wahluke Slope for her reserve tier on Oct. 26. She dropped it in oak for nearly two years, which begins to explain the nose of crushed walnut, dark plum, Marionberry and newly tanned leather. The palate brings flavors of dark boysenberry and plump blueberry with sturdy tannins and good length. Suggested pairings include rib roast and Pasta Bolognese.
