His time as an apprentice checking on lots of the acclaimed Chaleur Blanc program at DeLille Cellars undoubtedly helped define Dr. Kit Singh’s approach to white Bordeaux at his own Lauren Ashton project, and he leans toward Sèmillon (55%) ahead of Sauvignon Blanc in this blend from Cave B Vineyards in the Ancient Lakes and Art denHoed plantings in the Yakima Valley. He works stainless steel and neutral as well as new French oak barrels for an inviting and fruit-forward drink that hints at blood orange and tropicality with some Old World finesse of seashells – likely from the Ancient Lakes influence. There’s great texture to the mouthfeel and a citrusy-driven finish of lemon pith, a combination that will serve it well with seafood in zesty garlicky sauce and colorful antipasto platters.
