The Gladhart family uses the saignée method to draw off juice from some Pinot Noir blocks of its Salmon Safe estate in the Dundee Hills to create this charming and food-friendly rosé that spent six months in eight French oak barrels. The lovely pink salmon color brings aromas of Bing cherry, apricot and orange zest, which are followed by bright flavors of white peach, apricot and rose hips, backed by a Craisin skin finish. Suggested pairings include these recipes for Shrimp and Fresh Chorizo or Shrimp Salad with Hominy, Argula and Lime.
