Trisaetum Vineyards 2012 J&A Frey Vineyards Estate Riesling, Ribbon Ridge, $24
Riesling worshippers realize some of the Northwest’s top producers established vineyard sources in the region’s smallest appellation, and Trisaetum rapidly achieved cult status beyond Newberg, Ore., for its work with this noble white grape. James Frey creates two styles from each of his three estate sites, and here’s his off-dry version. It kicks off with whiffs of apple blossom, Asian pear, peach, apricot and jasmine. Luscious pineapple flavors are joined by apricot and Bartlett pear. On paper, the residual sugar is 2.5%, but the remarkable frothy acidity files down the hint of cotton candy and extends the fruity finish. Frey enjoys pairing it with this Slow-Cooked Spicy Asian Pork recipe.
