One of Washington’s most decorated winemakers focuses his attention on Cabernet Sauvignon off Red Mountain for his annual Meritage-style release as Klipsun Vineyard and E&E Shaw Vineyard contribute 50% to the red named after the Latin term for ‘sun and essence.’ The Merlot (22%), Petit Verdot (9%) and Malbec (5%) all come from StoneTree Vineyard on the Wahluke Slope, while Solstice Vineyard in the Yakima Valley accounts for the Cabernet Franc. Its aromatic profile features black cherry, ripe raspberry, dusty blueberry, tarragon and vanilla. Dark purple fruit flavors, reminiscent of Damson plums, Marionberry and more blueberry, are carried along by powerful tannins typical of Red Mountain. A food pairing idea suggested by Carter is Boar in Red Wine, a recipe credited to celebrity chef Carol Dearth of Sizzleworks Cooking School in Bellevue. This wine received a silver medal at the 2014 Seattle Wine & Food Experience Wine Competition.
