A blend of seven clones, leading with Pommard, picked throughout the last week of October receives some dark treatment from French oak. The nose features black cherry and Coca-Cola Vanilla with minerality, alfalfa and saddle leather. That theme of cherry and vanilla picks up pomegranate acidity on the midpalate and finishes with some grip and minerality. Suggested pairings include this Orange Chicken recipe from Cork Wine Cafe in Tulsa, Okla.
