Stainless steel treatment of Bordeaux varieties, primarily Cabernet Sauvignon, has been the recent formula of the brilliantly colored and complex rosé at this showpiece winery along the old highway just west of Walla Walla. Black cherry, cassis and raspberry aromas are met by chalkboard dust and mint. On the attack is a rich and thick presentation of Bing cherry and strawberry with hints of mesquite smoke. It’s bone dry with a fair bit of tannin and good acidity, which bodes well for suggested pairings of salmon, steelhead, tuna, halibut, bouillabaisse and summer salads.
