Spring Creek Vineyard near Prosser has been the source of their Sauvignon Blanc, and the nose hints at Key lime, gooseberry and Thompson Seedless grapes with notes of spearmint and green grass. There’s a burst of flavor on the entry that’s akin to biting into a Key lime, followed by more mint and jasmine. It finishes deliciously dry, making it easy to imagine with halibut or trout.
