Cadaretta 2011 Springboard, Columbia Valley, $50
The Middleton family’s winemaker in Washington state, Brian Rudin, left a graceful legacy at their Walla Walla Valley winery with this top-tier blend of Cabernet Sauvignon (80%) and Petit Verdot. It’s built for long haul with the Cab from Red Mountain, and the fermentation program is interesting with 80% percent in 100% new French oak for 19 months, while the rest was in stainless steel. A whiff brings alluring notes of black currant, blackberry and blueberry with caramel and pipe tobacco. The entry is bright and rich with more currant and blueberry flavors, sandy tannins and a finish of chocolate-covered pomegranate. These wines, now under the direction of University of Ste. Michelle alumnus Kendall Mix, are available at their downtown Walla Walla tasting room, and Cadaretta is offering a giveaway for cedar plank, ideal for cooking salmon, via their Facebook page through Feb. 6
