Stag Hollow Wines 2008 Reserve Pinot Noir, Yamhill-Carlton, $45
Mark Huff’s fascinating melange of Dijon clones 667, 777, 114 and 115, along with Pommard and Alsace clone Colmar 538 from this 34-acre estate — planted to high density of 3,000 vines per acre — is evolving beautifully. New barrels accounted for almost a third of the oak program, which makes room for a rich and intense nose of black cherry, cedar, forest floor, tobacco and a sense of gaminess. Those dark and dense tones carry through with black cherry and plum flavors. Plush tannins make for beautiful integration. This wine earned a gold medal at the 2013 Great Northwest Wine Competition, and time continues to serve it well. Suggested food pairings include game, salmon and earthy dishes featuring wild mushrooms and olives.
