John Freeman creates this Meritage-style blend for Precept Wine CEO Andrew Browne’s growing brand, which includes a tasting room in downtown Walla Walla. This assemblage of Cabernet Sauvignon (48%), Malbec (16%), Merlot (15%), Cabernet Franc (12%) and Petit Verdot includes estate fruit but also goes beyond with Pepper Bridge, Elephant Mountain and Klipsun vineyards. It also spent 21 months in 39% new French oak. Alluring aromas of black cherry, huckleberry, anise, chalkboard dust and black tea transcend into rich flavors or black cherry and blueberry. Mild tannins make for a luscious midpalate that’s focused on fruit, including a finish of President plum. Suggested pairings include lamb burgers, a grilled portobello sandwich or pork loin influenced by rosemary and peppercorns.
