The team at Waterbrook Winery in Walla Walla takes the lead on the wines for this Precept brand, and they show a respect for craftsmanship with this remarkable Chardonnay. It starts in the vineyards — Wallula in the Horse Heaven Hills and Willow Crest in the Yakima Valley — and continues with the oak program, 60% of which is French. Aromas of butter and oak lead to expansive notes of Ambrosia salad with pineapple and pear, Lemonhead candy and ghee. The drink is rich, plush and round with flavors of mango and butterscotch candy, but it’s all backed by lemony acidity to make it rather complex and quite complete.
