Judy Phelps works with their 25-acre, certified sustainable and Salmon-Safe estate Glacial Gravels Vineyard overlooking the north shore of Lake Chelan for this blend of Sauvignon Blanc (68%) and Semillon, a lot that was taken Oct. 11, barrel fermented and aged on the lees for eight months in neutral French oak. It’s a lively, acid-driven presentation of Asian pear, starfruit, lemon and Granny Smith apple that conjures up thoughts of oysters on the half shell. Judy and Don also suggest serving it with asparagus, including this recipe for Soba Salad with Asparagus and Shrimp.
