One of Washington state’s largest vineyards certified as Salmon-Safe and LIVE sustainably farmed set the table for this expressive Cab from a bounce-back vintage. There’s density to the nose of dark toast, chocolate-covered cherry, smoked plum and Graham cracker with cigar box, black olive and Horse Heaven Hills minerality. That theme spills onto the palate, where it also offers black currant, sturdy tannins, pomegranate acidity and cherry skins in the finish. Suggested pairings include beef, pork or venison dishes influenced by herbs such as bay leaf, fennel or thyme.
