Treveri Cellars NV Pinot Meunier Rosé Brut, Columbia Valley, $54
This fall, the Grieb family celebrated the fifth anniversary of Treveri Cellars in the Yakima Valley with a dinner unveiling its Pinot Meunier Rosé Brut. The fascination starts with aromas of rising sourdough bread, raspberry pie, mango, bubble gum and vanilla. It brings bold and remarkable flavors of more raspberry, tutti frutti and vanilla, framed by a structure that’s rich and creamy with a luscious and viscous mousse. Its finish offers white pineapple and warm French bread. Carousel Restaurant & Bistro chef Greg Handmacher paired this special sparkler with a menu featuring his Pork Rillettes and Sister Points Live Oysters, Roasted Pear & Arugula Salad, Roasted Butternut Bisque, Salmon with Raspberry Compote, Poitrine de Poulet and Cherries Jubilee.
