Double Canyon 2013 Cabernet Sauvignon, Horse Heaven Hills, $25
U-C Davis product Stephanie Pao furthers her tradition of using Syrah (17%) as a part of her regal Cabernet Sauvignon bottlings from this remarkable neighborhood in Washington’s Horse Heaven Hills. A 17-month program of 30% new barrels accounts for aromas of coffee and coconut with blackberry, black cherry and mincemeat spices. The drink, which also involves Malbec (4%) and Petit Verdot (4%), delivers a focused, dark, dense and creamy structure featuring flavors of black currant and Bing cherry. Chocolaty and sandy tannins are met with raspberry acidity, creating a delicious balance. These wines also are available for sampling in Seattle’s Pioneer Square as part of the Crimson Wine Group’s tasting gallery – The Estates Wine Room – which includes famed Oregon Pinot Noir producer Archery Summit and soon Walla Walla’s Seven Hills Winery.
