The Wallace family manages Cab clones 15 and 337 at this former pear orchard near the banks of the Rogue River in Oregon. The light influence of oak allows for aromas of cranberry, cola, cigar box, saddle leather and California red peppercorns. Red currant and Montmorency cherry flavors create a lighter, Old World expression of Cabernet Sauvignon, making for pleasing acidity, ample tannins and a finish of leather and spice. Suggested pairings include dishes featuring a heavy butter cream sauce or steak topped by blue cheese.
