Yakima psychiatrist George Petzinger blends Cabernet Sauvignon (75%) and Merlot from two Yakima Valley sites — Good Earth Vineyard and Two Coyote Vineyard — with most of the juice having lived in oak since 2010. There’s no sign of either oxidation or age, instead it offers aromas of chocolate-covered cherry, dark currant, pencil shavings, sage and violets. Inside, there’s more of the sweet oak coming through with dark red fruit flavors, and the long-running tannins hint at the some of the structure coming from oak. Juicy cranberry acidity and vanilla bourbon keep pushing alongside those tannins for a warm finish. Enjoy with pot roast or meatloaf, and look for it via the winery’s website or Essencia Artisan Bakery and Chocolaterie in Yakima.
