DeLille Cellars 2015 Grand Ciel Cabernet Sauvignon, Red Mountain, $160

The vision behind this Cab begins with DeLille Cellars founding winemaker Chris Upchurch, the Lill family and Jay Soloff, who all partnered in 2001 with Jim Holmes of famed Ciel du Cheval Vineyard. Their stated dream was to create for Washington a vineyard reminiscent of a Bordeaux First Growth. Within a decade of the first commercial release of Grand Ciel Cabernet Sauvignon, one international critic described the Grand Ciel Cab as “a spitting image of a top Pauillac.” Two vintages after that buzz-worthy 2013 bottling comes another classic expression of Cab off Red Mountain, swirling with aromas and flavors of cherry, vanilla, blueberry jam and hints of humidor and baking spice. There’s a wealth of structure to its age-worthy profile that’s accessible now with decanting as well as a decade or two down the line.
